Vegan Soups by Sopa Organica
So many of us resolve after the holidays to reform our diets, but heavy work schedules often bat us off course. That’s why truly good ready-made products like those by Toronto-based Sopa Organica are worth seeking out (www.sopaorganica.com). Argentinian chef, Andy Besserman, began Sopa Organica with a line of vegan soups, and will soon be adding a line of organic baby foods, along with staples like dips and sun-dried tomatoes (I’ve tried them, and they’re absolutely delicious). I asked Andy when the new lines would be out and he said, “I’m so busy making soups, I barely have time to cook anything else! But, they’re coming.” How’s that for commitment to quality? Andy makes every soup himself. “I chop everything with my own knife; I taste every batch,” he says. His flavours are original (Beet and Barley, Tomato and Quinoa, to name just two) and his seasonings are brave and personal. If only all ready-made food could be this good!
